Lemon Blueberry Cookie Recipe

Bright, zesty, and bursting with flavor, these lemon blueberry cookies are the perfect balance of tart and sweet. With blueberries folded into a soft, buttery dough and a hint of fresh lemon in every bite, they’re a perfect summer cookie. Ingredients

  • 2/3 cup softened butter

  • 1/2 cup brown sugar

  • 1/2 cup white sugar

  • 1 teaspoon lemon juice

  • 1/2 teaspoon vanilla extract

  • 1 egg

  • 2 tablespoons lemon zest

  • 2 cups plus 3 tablespoons all purpose flour

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon salt

  • 3/4 cup blueberries


Instructions

  1. Preheat your oven to 350°F and prepare a non-stick pan.

  2. Wash blueberries and dry completely.

  3. In a large mixing bowl, use a handheld mixer or stand mixer to beat together the butter, brown sugar, and granulated sugar until creamed together.

  4. Add the vanilla extract, lemon juice, and egg. Mix until smooth.

  5. Gradually add flour, baking soda, salt, and lemon zest to the bowl. Do not over mix!!

  6. Using a rubber spatula, very gently fold the blueberries into the cookie dough.

  7. Scoop and roll out even balls of dough and put them on the tray about 2 inches apart.

  8. Bake the cookies for 8-11 minutes.


Once the cookies have cooled, they’re ready to enjoy. I like to sprinkle with some powdered sugar! The combination of bright lemon and juicy blueberries makes them a great anytime treat, whether you’re sharing with friends or keeping a few for yourself! Happy baking!
