Ingredients

  • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced small

  • 2 tbsp salted butter

  • 1/3 cup granulated sugar

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1 tbsp cornstarch

  • 1 egg

  • 1 package of pre-made pie crust

  • Flour

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.

  2. In a saucepan over medium heat, melt the butter. Add diced apples, sugar, cinnamon, and nutmeg. Cook for 5–7 minutes, stirring occasionally, until the apples begin to soften. Make a slurry with cornstach and water. Add to the apples while stirring until they are thickened. Let the apples cool.

  3. Unroll the pie crust and use a cookie cutter (about 4 inches wide) to cut out the pie bottom and place on your baking sheet. Cut small strips of dough for the lattice.

  4. Put the pie crust bottoms in the oven for 2 minutes - this helps ensure the bottom isnt doughy.

  5. Place a spoonful of apple filling in the center of the dough and assemble the lattice on top. Press down all the edges firmly.

  6. Whisk the egg and milk together, then brush over the tops of each hand pie.

  7. Bake for about 6-8 minutes or until the top is golden brown!

  8. Enjoy!! I recommend you serve warm with a scoop of vanilla ice cream or a drizzle of caramel sauce.

These apple hand pies bring all the nostalgia of homemade apple pie in a fraction of the time. They’re simple, satisfying, and just the thing to bake when the air turns crisp and you want to fill your home with that irresistible scent of cinnamon, apple, and butter.
